Broccoli Curry

Ingredients
- 1tbsp vegetable oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 potato (around 150g), diced
- 1 carrot (about 100g), diced
- 2tsp curry powder
- 100ml curry pwder
- 2tbsp masala paste
- 1 Broccoli. Cut into florets and stem grated
Directions
To begin, heat up some oil in a frying pan. Then, add in the onion and garlic and mix in the spices. Fry everything for around 10 minutes until the mixture becomes soft. Next, add in the vegetables and seasoning, stirring well until they are coated. Pour in the stock, cover the pan, and let everything simmer for about 30 minutes until the vegetables are fully cooked. If desired, blend the mixture and serve it with rice.
