Broccoli Stir Fry

Ingredients
- 2 tbsp sesame oil
- 4 spring onions, diced
- 1 garlic clove, minced
- Fresh root ginger, about 1cm, peeled & minced
- 1 carrot, cut into matchsticks
- 1 red pepper, cut into matchsticks
- 1 broccoli stem, finely grated
- 150g beansprouts
- 2 tbsp hoisin sauce
- 2 tbsp soy sauce
Directions
To start, heat up a wok on high heat and pour in some sesame oil. Once it's hot, add the spring onions, garlic, and ginger and stir-fry for one minute before lowering the heat. Be careful to avoid browning the vegetables.
Next, include the carrot and red pepper and stir-fry for two minutes. After that, add the broccoli and beansprouts and continue stir-frying for another three minutes. Use a wooden spatula to toss the ingredients from the centre to the side of the wok, making sure not to overcrowd it and keeping everything moving.
Add a tablespoon of water, along with hoisin and soy sauce, and cook over high heat for two minutes or until the vegetables are cooked but not too soft. Serve with your choice of noodles or rice.
